In October 2024, The Macallan celebrated 200 years of whisky-making with an immersive experience at Amsterdam’s Nxt Museum a striking venue dedicated to art shaped by technology. The evening was the official launch of The Macallan’s TIME:SPACE collection, and brought together storytelling, fine dining, and sensory design in a fully choreographed journey through time and flavor.
We at Mr. Sipps were entrusted with designing and executing the beverage experience. Our task was to develop a sequence of bespoke cocktails that not only paired with the dishes curated by the two-Michelin-starred team from 212 Amsterdam but also matched the rhythm, emotion, and progression of the evening.
Beyond developing the drinks, we worked closely with the floor team and producers to establish the order of service, ensure pacing with the kitchen and performances, and maintain consistency across 50 guests and more than 250 drinks served all in a live, immersive environment. Every pour had a purpose, and every detail from glassware to temperature was premeditated.

Macallan 18 Double Cask, Pineau de Charentes, Schisandra & Vanilla Sherry, Clarified Rhubarb
Served on clear ice with an isomalt garnish
